Dried Fig Mixed Salad
A sweet and savory Greek-inspired salad that balances chewy dried figs, crisp greens, and salty feta with a bright vinaigrette. Perfect as a starter or light lunch.
Ingredients:
4–5 dried figs, sliced into quarters
5 cups mixed greens (arugula, baby spinach, romaine)
1/4 cup thinly sliced red onion
1/3 cup crumbled feta cheese
1/4 cup walnuts or pecans, toasted
1/4 cucumber, thinly sliced
2 tbsp pomegranate seeds (optional, for color and tartness)
For the dressing
3 tbsp extra virgin olive oil
1 tbsp balsamic vinegar or Messino pomegranate balsamic
1 tsp honey
1 tsp Dijon mustard
Salt and freshly ground black pepper, to taste
Instructions:
Prepare the dressing
In a small jar or bowl, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper until smooth and emulsified.
Assemble the salad
In a large salad bowl, combine mixed greens, sliced figs, red onion, cucumber, and nuts. Gently toss with half of the dressing. Add crumbled feta and pomegranate seeds, then drizzle with remaining dressing.
Serve immediately
This salad pairs beautifully with grilled meats, warm flatbread, or as part of a meze spread. For extra richness, you can also add a few thin slices of prosciutto or grilled halloumi on top.
